Mungo Guisado

We bought a new cookbook for Filipino recipes. We had one already, but it didn't have all of the recipes that we wanted to make. So we picked out this one - Memories of Philippine Kitchens. I made the first recipe out of it tonight, Mungo Guisado. It is a stew made out of mung beans, with tomatoes and onions. It is traditionally seasoned with pork or shrimp, but I didn't use any meat in it. It's a pretty healthy dish, and very filling.

I especially wanted to make something like this, because my husband is sick. He has a sinus infection and isn't feeling well. Since this is flavorful without being strong and spicy it worked well. It also didn't take that long to make, hands on time was probably around 10 minutes.
